A second location of Nashville chef Deb Paquette's Etch has opened in The Factory at Franklin.
Deb Paquette and the Etch Franklin team
Paquette's Etch menu is known for its global inspiration. The award-winning culinary artist was the first woman in Tennessee to qualify as a certified executive chef.
On the appetizers menu in Franklin is, of course, the roasted cauliflower, which became a Nashville favorite. The menu includes other original location creations such as its namesake Etch salad, frenched chicken breast and crispy potato salad.
Jess Lambert has been with Paquette's Nashville team and in opening the Franklin location has been named an executive chef of both Etch and sister restaurant Etc. Executive pastry chef Megan Williams also is part of Franklin opening team.
The restaurant, like its Nashville location, offers two private dining rooms, a full bar, and a chef’s bar for a peek into the culinary operations. It can seat about 175 guests and has a staff of more than 50 employees, according to a release. Paquette partners with 4Top Hospitality to own and operate Etch, Etc. and Jasper's. 4Top also owns restaurants Amerigo and Char.
Etch opened officially on Tuesday in the former Viking Store and Cooking School space located on the right side of The Factory. Still under construction next door is another future restaurant with a Nashville location, Australian cafe Two Hands.
The opening of Etch comes on the heels of locally-based TomKats' Saffire reopening in The Factory as well.
