Shockingly, my mother in Manchester turned me on to Soy Bistro. An avid watcher of all things Food Network, “Diners, Drive-ins and Dives” had visited the location in Brentwood. She asked if I had been, and I had to admit I had not. I quickly changed that years ago, and anytime I need to be in Brentwood during lunchtime, I make sure to stop inside this tiny spot next to the dry cleaners on Maryland Way. The bibimbap is the way to go and might I suggest doing so in the skillet. The rice is able to crisp that way, giving it the perfect crunch. In a twist, Soy Bistro also offers up Asian-inspired tacos, and the dumplings are a must-have.
