Back when Steve Dale was touring with Little Big Town, he used to host post-show “fiesta nights,” cooking up some of his favorite southwestern dishes. Dale would eventually leave the road, opening his popular New Mexican restaurant, Sopapillas, in 2010. Sixteen years later, loyal diners are still digging the blue corn chicken enchiladas, hearty green chile stew and tasty street tacos. The savory stuffed sopapillas are also amazing, especially when paired with a zesty Paloma or Hatch green chile pineapple margarita. There’s a lovely patio for summer sipping, and don’t forget to save room for their signature dessert — golden, flaky sopapillas drizzled with honey.
