Mexican food doesn’t have to be fancy. In fact, it doesn’t need to be either. Pancho’s is a place where you get big helpings for a great price hidden in the shopping center behind the At Home store. You can easily walk in, get a table and find a favorite server who will remember your name. I have tried a sampling of everything on the menu, and I can’t recommend the chimichangas, burritos and pollo rico enough. I found Pancho’s around 11 years ago, and I haven’t needed to eat at another Mexican place since then.
